It’s fair enough to put the porridge aside on Pancake Day, but that doesn't mean you’re in for an oatless breakfast! These lovely light little pancakes use rustic spelt flour and oats for a really wholesome flavour, and the batter is so super easy you can whip it together on the morning itself. Stuck for topping options? Why not use one of our bar flavours as inspiration? Perhaps a little honey and a few raspberries? Blueberries? Figs and date syrup? You get our drift.
1/2 cup spelt flour
1/3 cup Stoats Unique Blend Porridge
1/4 cup yogurt
1 tablespoon caster sugar
1/2 teaspoon baking soda
A pinch of salt
3/4 cup milk
In a bowl, mix together all your ingredients until well combined.
Add some coconut oil, butter, or veg oil to a saucepan, and dollop on spoonfuls of mix to form your pancakes.
After a few minutes on one side, flip the pancakes and cook for a further minute or two until golden and cooked through.
Serve up, and drizzle with syrup and top with fruit of your choice.
