'Roots of Romance’ Valentine’s Day Granola

It’s that special day again, where extraordinary lengths are taken by us all to prove our immense love for that special someone. But chocolate boxes and wine seem to have become the ‘go to’ these days and honestly, since when was following the crowd romantic!? As per, we encourage you to truly surprise your beloved, the apple of your eye… actually beetroot or carrot in this case (we will explain shortly). For that, we’ve got the perfect recipe!

 

The ‘Roots of Romance’ Valentine’s Day Granola. Why ‘roots’ you say? That’s where the carrot and beetroot comment comes in. These granolas celebrate two root vegetables - carrot and beetroot - in all their splendour. The carrot recipe tastes a bit like a crunchy carrot cake, and the beetroot recipe includes scrumptious coconut chips and a Botanical Hibiscus Flower Blend (from JustBe) to make for a truly unique flavour combination. Plus, the beetroot takes on an awesome pink colour making it perfect for a Valentine’s Day! Of course you could save yourself the time and just make one of the granolas, but we reckon with double the granola, there's double the love.

 

Carrot Cake Granola

Ingredients 

1 large carrot finely grated

1 cup Stoats Unique Blend Porridge Oats

1/2 cup barley flakes

20 grams honey or maple syrup

30 grams brown sugar

A pinch of salt

1 teaspoon cinnamon

A pinch of nutmeg

A pinch of ginger

A handful of walnuts or almonds

 

Combine all the dry ingredients and the carrot, and mix to distribute all the flavours.

Blend the oil, sugar, and syrup, and heat the mixture to melt any sugar granules.

Mix the syrup into the dry mix and stir until every grain is coated.

Bake at 160 degrees for 30 minutes, then leave the tray to cool before popping the granola into a container.

 

 

 

 

Beetroot Coconut Granola

Ingredients 

1 cup Stoats Unique Blend Porridge Oats

1/2 cup barley flakes (or more oats)

1 large cooked beetroot + 150 ml beetroot juice.

20 grams honey

30 grams brown sugar

40 grams oil

A pinch of salt

A handful coconut chips

A handful of ‘JustBe’ botanical blend

A handful sunflower seeds

 

Combine all the dry ingredients, and mix to distribute all the flavours.

Blend the beetroot with the juice, oil, sugar, and syrup, and heat it to melt any sugar granules.

Mix the pink syrup into the dry mix and tie until every grain is coated.

Bake at 160 degrees for 30 minutes, then leave the tray to cool before popping the granola into a container.
