Chocolate chip cookies. A concept so perfect it’s really not worth messing with. We use brown sugar for its nutty flavour, Scottish butter for richness, and chocolate chips for… well, chocolate! By finely blending down some of our Unique Scottish oats you don’t need to use any additional flours, meaning these cookies are wheat free! Better still, they are super speedy to throw together and will have those afternoon rumbles settled in no time.
Makes 18 cookies
250 grams Stoats unique blend porridge oats
120 grams soft butter
130 grams brown sugar
1 teaspoon baking powder
100 grams chocolate chips
A pinch of salt
Cream together the butter and sugar until light and fluffy.
Add the egg and beat well to combine.
Blend half of the oats in an electric mixer or blender until you achieve a flour like consistency.
Add the blended oats, the chocolate chips, baking powder, salt, and the remaining oats to the wet ingredients and mix.
Roll out balls of the mixture and place on a lined baking tray giving each cookie room to spread.
