With the Rio Olympics in full swing, the team here at Stoats HQ (along with the rest of the world) are buzzing for all things Brazil! In fact, we’re so excited we decided to create a delicious granola celebrating all the flavours of this year's Olympic hosting country. In honour of Brazil's exotic ingredients, we combined zesty lime, succulent pineapple slices, Brazil nuts and lime juice infused raisins with our very own wholesome porridge oats. The result… delicious, coconuty, zesty, crunchy goodness. Now, if that’s not got your tastebuds tingling we don’t know what will!
This recipe is another delicious way to bring oats into summer, and for those of us remaining on this side of the world during the Olympics, it’s the perfect way to get the team spirit going!
3 cups Stoats Unique Blend Porridge Oats
1/4 cup brown sugar
1/4 cup agave nectar
1/4 cup coconut oil
1 lime, zested and juiced
1 cup toasted coconut flakes
30 grams dried pineapple pieces
30 grams lime juice infused raisins
1/2 cup broken Brazil nuts
Combine the oil, sugar and syrup in a large bowl, and microwave until slightly bubbling.
Add the oats and nuts, and stir until all is evenly coated.
Spread the mixture onto a lined tray and bake at 180 degrees for 30-40 minutes.
Remove the tray from the oven, and mix in the dried fruit and coconut flakes.
Allow the granola to cool, then jar up and eat as you wish - with yogurt, milk, over ice-cream, or even just by the handful. We think it's worthy of a gold medal!
